Spicy Butternut Chickpea Stew

A hearty chickpea and butternut squash stew with tamarind, ginger, habanero, nopal cactus, zucchini, and fresh dill.

Ingredients

  • Butternut squash
  • Chickpeas
  • Tamarind
  • Ginger
  • Shallot
  • Onion
  • Bell pepper
  • Nopal cactus
  • Zucchini
  • Habanero pepper
  • Oregano
  • Dill
  • Sea salt

Method

  1. Boil the chickpeas until tender.
  2. Simmer the tamarind in water until softened, then remove the stems and seeds.
  3. Roast the butternut squash until soft.
  4. Blend the roasted squash with shallot, chickpea cooking water, ginger, habanero, and tamarind to make a sauce.
  5. Saute onion with oregano, then add bell pepper, nopal cactus, and zucchini.
  6. Add the chickpeas and sauce, cover, and simmer until the stew is flavorful.
  7. Finish with fresh dill and sea salt to taste.
